Ingredients

  • 2 1⁄2 lb cubed beef for stew
  • 3 mashed garlic cloves
  • 1 T capers
  • 3 T olive oil
  • 2 pieces minced bacon
  • 1 large minced onion
  • 1⁄4 t each nutmeg, ginger, clove, sugar
  • 1⁄4 c pine nuts
  • 1⁄4 c dried currants
  • 1⁄2 c chopped spinach
  • 3 T minced parsley
  • 1 minced hardboiled egg
  • 1⁄2 c red wine
  • 1⁄2 c beef or veal stock
  • 1 tbsp red wine vinegar

Instructions

Brown the meat over high heat in the oil
Add the bacon and cook briefly.
Add the onions, garlic, spices and cook briefly.
Add the wine and stock, bring to a boil and simmer, covered for 1hour.
Remove cover and add the spinach, simmer uncovered for 30 minutes.
Stir in the currants, nuts, capers, parsley and vinegar.
Cook for another minute or so, adjust seasoning and serve.
Garnish with the egg.
