Whole shrimp are your best shrimp value for taste, nutritional effect, and dollar for dollar. I utilize them in a hundred ways, but simple is best. Here is a simple recipe to get you started.
Cut 6 pieces of aluminum foil, 12 inches square. Laying them flat, place a cilantro sprig on each piece of foil. Divide shrimp and place on top of cilantro. Sprinkle with the wine and season with the salt and pepper.
Then divide the citrus, tomato and celery on to the shrimp piles. Bring sides of foil up and to the center. Fold down to secure and make ‘airtight’.
Place pouches in a single layer on a cookie sheet in a 500 degree oven for 10-12 minutes to cook through.
Spill contents of the pouches on individual plates, or serve family style. Best served with one of these sauces:
