Homemade beef broth really makes this dish taste like your little Russian grandmother made it. Serve with black bread, prepared horseradish and sour cream to complete the meal.
Ingredients
0.5 gal beef stock and beef
1 bay leaf
6 crushed garlic cloves
4 T minced dill sprigs
3 T minced parsley
juice of 1 lemon
2 T white vinegar
32 oz can diced tomato in its own juice, drained, juice reserved for another use
2 T tomato paste
1 c each diced carrot, celery, onion
2 c shredded savoy cabbage
2 lb beets, peeled and diced
sugar, salt and pepper to taste
Instructions
Place a few tablespoons of oil in a large pot over medium high heat and add the vegetables, garlic, tomato paste and spices. Sweat until the onions are glassy .
Add the liquids, beef and tomatoes.
Bring to a simmer and cook for 1 hour.
