Description

Homemade beef broth really makes this dish taste like your little Russian grandmother made it. Serve with black bread, prepared horseradish and sour cream to complete the meal.

Ingredients

  • 0.5 gal beef stock and beef
  • 1 bay leaf
  • 6 crushed garlic cloves
  • 4 T minced dill sprigs
  • 3 T minced parsley
  • juice of 1 lemon
  • 2 T white vinegar
  • 32 oz can diced tomato in its own juice, drained, juice reserved for another use
  • 2 T tomato paste
  • 1 c each diced carrot, celery, onion
  • 2 c shredded savoy cabbage
  • 2 lb beets, peeled and diced
  • sugar, salt and pepper to taste

Instructions

Place a few tablespoons of oil in a large pot over medium high heat and add the vegetables, garlic, tomato paste and spices. Sweat until the onions are glassy .
Add the liquids, beef and tomatoes.
Bring to a simmer and cook for 1 hour.
