Oyster and Corn Fritters

Description

Serves 8 as an hors d’oeuvres.

Ingredients

  • 1 1⁄2 c shucked and chopped fresh oysters, oyster liquor included
  • 1 c corn meal
  • 2 c flour, plus more if needed
  • 1 T baking powder
  • 1⁄2 t sugar
  • 1⁄4 t ground black pepper
  • 1⁄2 t salt
  • 3⁄4 c milk plus more if necessary
  • 1 egg
  • 3 T minced scallions
  • 2 c freshly scraped corn kernels, mashed
  • …try adding a few tablespoons of minced peppers or some of your favorite herbs and spices!

Instructions

Heat vegetable oil, 3 inches deep in your favorite deep frying pan. Heat to 375.

Combine the wet ingredients. Combine the dry ingredients.

Fold the wet ingredients into the dry ingredients with a spatula, adding more milk or flour if needed. The batter should be fairly stiff.

Drop large spoonfuls of the batter into the oil. Fry until golden brown.  Serve with remoulade sauce or with lemons and Crystal hot sauce.
