Grilled Prawns and Tasso Ham with Hot Red Pepper Jelly

Ingredients

  • 2 lb peeled and de-veined shrimp (ocean caught u-10’s work best)
  • 1 1⁄2 lb tasso ham (available at nofh.com or neworleanscooking.com or realcajun.com)
  • 3 T fresh thyme leaves
  • 2 T minced parsley
  • 3 T vegetable oil
  • 2 T Crystal hot sauce
  • 1 c cup jalapeno jelly

Instructions

Butterfly and marinate shrimp for 4 hours in the thyme, parsley, oil and hot sauce.

Butcher the ham into 1” long by 1/2” wide rectangles. Wrap each marinated shrimp around the plug of ham, securing with a toothpick or short skewer. Grill over high direct heat until cooked through.

Serve with the jalapeno jelly.
