Butterfly and marinate shrimp for 4 hours in the thyme, parsley, oil and hot sauce.
Butcher the ham into 1” long by 1/2” wide rectangles. Wrap each marinated shrimp around the plug of ham, securing with a toothpick or short skewer. Grill over high direct heat until cooked through.
Serve with the jalapeno jelly.
