Description

The yield claims 14, but this is for 14 pieces.  Depending on other appetizers you may be serving, or if you are serving these clams for a first course - feel free to adjust accordingly.

Ingredients

  • 5 T Peanut Oil
  • 2 t sea salt
  • 2 t sugar
  • 1 T grated fresh ginger
  • 3 T minced scallions, plus more for garnish
  • 2 T rice wine
  • 2 T black soy sauce
  • 3 dried red chiles
  • 1 lb u-15 shrimp*, butterflied in the shell**

Instructions

Heat a wok over high heat.
Add oil and swirl
Add shrimp, chiles and toss, cooking quickly.
Add the salt and sugar and glaze the shrimp
Add the ginger and scallion and toss.
Add the liquids and reduce by half.
Plate contents of the wok and let rest for 30 minutes.
Toss to redistribute the sauce and serve, garnishing with more scallions
