5 Questions with Raw Foodie Ani Phyo

Question from a carnivore.

Question from a carnivore.  When I read the title it says raw vegan. What exactly is that. Does that mean none of the food is cooked? If so how do you eat veggies like squash or corn? Yet in your questions you said foods like lasagne. Does that mean a food prepared to look like lasagne? With no oven time??

Raw answers

Here's the deal: Ani and other folks who choose to eat a raw/living foods diet only eat organic, as fresh as it can be, foods that are never heated over 104 degrees farenheit. This because it is thought that anything higher than that kills enzymes that aid with digestion, help with energy production and cell division.

So when it comes to food like lasagne, yes- it's prepared to look like lasgne, with similar taste profiles. But instead of traditional pasta, you'd use zucchini or something cut into the shape of the flat noodles.

As for the squash question: it goes into dishes uncooked. Ani has a recipe for Angel-Hair Squash. You can use a spiralizer to get the squash into thin noodle shapes, and you toss it with pesto sauce. But you don't get to eat it hot.

Clearly, this type of diet is not for everyone, but I find it interesting to learn new ways cooking (or UNcooking, as the case may be). Definitely healthy.
