Description

Squirrel is not in the drop down for main ingrediants.

If you like some real good hearty, gamey casserole this is it. I make this every winter with my catch from the fall. I personally like the taste of red squirel better. They are a bit fatter and I think have a better taste.

Ingredients

  • 6 squirrels
  • 1 bag of egg noodles
  • 2 c Corn Flakes
  • 1 stick of butter, divided
  • 1 clv crushed garlic
  • 0.5 small yellow onion, minced
  • 1 c flower
  • 2 cn chicken broth
  • 1 tsp thyme
  • 1 tbsp fine pacific sea salt
  • 0.5 tsp fresh ground black pepper
  • 2 c shredded sharp cheddar
  • 0.5 c durkee/frenches fried onions
  • 1 tsp cinnamon
  • 1 tsp nutmeg

Instructions

Boil the squirrells in a large pot until the meat falls off the bones. Remove and cool. Then debone, set aside.

While the squirrels are cooking, cook the noodles, drain and set aside

In a sauce pan, melt 1/4 stick of butter. Stir in cornflakes, crushed garlic, and minced onion. Heat until a bit crispy

Spread the cornflakes on the bottom of a greased casserole dish

In a sauce pan melt, remaining butter. Add flour and brown just a little. Add chicken broth, stir until think

Remove from heat andd add thyme, cinnamon, nutmeg, salt, pepper, squirrel meat, and noodles. Mix Well.

Pour evenly over the cornflakes. Top with cheese and fried onions

Notes

This is a great meal for the winter. Best served watching football or hockey, and drinking beer.

You crack me up. But I would totally eat this. Where does one get squirrel if one does not hunt for it? Or is that just part of the deal?

No clue if you can buy squirrel anywhere.  I hunt mine. I usually take between 12 and 20 a year.
