Description

A great dip for the upscale or casual summer dinner party, all are sure to be impressed. If you don't usually consider yourself much of a cook, this is a great recipe to work with. Its also a great salsa to put on fish and poultry. Try it either way!

Ingredients

  • 2 clv garlic
  • 1 t salt
  • 1 small onion, minced fine
  • 2 serrano chilies, minced very fine
  • 0.5 lb tomatillos, husked, rinsed and quartered
  • 1 ripe avocado
  • 3 T fresh chopped cilantro leaves
  • 2 T fresh lime juice

Instructions

Combine the chiles, onion, salt, garlic, tomatillos and cilantro in a food processor and pulse to combine. Do not over puree. Reserve.

Halve the avocado, remove and discard pit and scoop out the flesh, discard skin… using a fork, mash the avocado in to the sauce with the lime juice.

Season and serve quickly.

If you have to make ahead of time, place avocado pit in with salsa and place in an air tight containor. Don't make more than 3 hours ahead of time.
