The easiest way to clean leeks is to trim the green down, leaving the part you wish to use. Then slice the leek lengthwise. Rinse in between the layers - it is nice to try to keep the layers together so that slicing and dicing is easier after rinsing - just spread the layers out like a fan, or loosly hold them in your hand as you run the water through them.
