Description

My mother makes one of the best cheesecakes I've ever tasted, and the only thing better than having a bite is the story behind the recipe. Mom attended Mills College in San Francisco Bay area and became great friends with the daughter of Vic Bergeron, better known as Trader Vic. In addition to inventing the Mai Tai, Bergeron taught my mom how to cook. This is my mom's adaptation of Vic's cheesecake recipe. Trust me, it's killer.

Ingredients

  • crust:
  • 4 oz butter (one stick)
  • 2 c graham cracker crumbs
  • 1 c brown sugar
  • 1 t cinnamon
  • filling:
  • 4 eggs
  • 1 t vanilla extract
  • 1⁄2 c sugar
  • 24 oz cream cheese
  • 2 t lemon juice
  • topping:
  • 1 pint sour cream
  • 4 T sugar.
  • 1⁄2 t vanilla

Instructions

For the Crust:
Melt butter, mix with other ingredient. Press into pie plate, forming bottom and sides.

For the Filling:
Beat eggs. Add sugar and remaining ingredients. Pour into crust. Bake at 350 degrees for 40 minutes. Cool 1/2 hour.

For the Topping:  
Mix all ingredients. Spread on top. Bake at 475 degress for 8-10 minutes. Chill at least 24 hours.
