Summary
DescriptionCombine all the ingredients except the plantains and cheese, set aside. Peel the plantain lengthwise removing half the skin so the fruit rests in the other half like man laying down in a canoe. Grill over low direct heat, skin down until skin blackens and blisters. Brush plantain with vegetable oil and turn over allowing fruit to make contact with the grill until it chars and grows soft/sweet. Set aside and keep warm on grill away from heat. When you flip plantains, place a small no stick pan on the fire, brown cheese pieces on both sides and serve everyone one plantain, with 2 pieces of cheese and a small pile of the slaw. Heaven.
