Description

Perfect stew for the holidays. I love it on Thanksgiving.

Ingredients

  • 0.5 gallon fresh shucked oysters
  • 2 T (1 piece) minced smoked bacon
  • 1 t Old Bay Seasoning
  • 1 c thinly sliced celery
  • 1 c thinly sliced yellow onion
  • 1 large baking potato in very thin slices
  • 1 bouquet garni of 2 sprigs parsley, 2 sprigs fresh thyme and 2 sprigs fresh tarragon
  • 2 t paprika
  • 2 T worcestshire sauce
  • 2 c fish stock... (or clam juice)
  • 0.5 gal heavy cream
  • 2 T minced chives

Instructions

Drain the oysters. Strain and reserve the liquid.

Place a large pot over medium high heat. Add the bacon, swirl and add all the dry ingredients and vegetables.
When onions are cooked through add the oyster liquid and stock.

Bring to a slow boil and cook for 10 minutes. Add the cream. Cook, simmering for 5-8 minutes, until cream thickens.

Add the oysters and return to a very slow boil. Season with the worcestshire to taste, pull the herb sprigs and discard, and serve with buttered toast. Garnish with some minced chives.

ever since i was little i knew i was going to go to college. i ended up going to psu where my grandparents went. the thing is i dont know what i want to do. my dad has been telling me my future since i was 14 telling me to go into business and ever since the bail out now telling me to go into computer science. i know i can do either but the thing i love is food. i like eating diffrent kinds of food. im not a big eater tho im actually a lil underweight but i have have always loved cooking and watching ur show and food network. i was thinking about being a food critic but i dont want to be a failure and disappoint my dad. what should i do? btw my granmother makes oyster stew every thanksgiving and i love it. we also have lobster bisque whish is one of my favorite types of stew. thanks for listening.
