Description

This is great with chips or on top of Chicken Mole Tamales.

Ingredients

  • 1 lb tomatillos, paper ‘peels’ removed, and tomatillos halved
  • 1 large onion, diced
  • 3 T olive oil
  • 1 garlic clove
  • 0.25 c cilantro leaves, minced fine
  • 1 T fresh lime juice

Instructions

Toss the garlic, tomatillos and onion with the oil.
Place in a pie pan and broil, tossing occasionally, until mixture is charred and fragrant.
Pulse mixture in a food processor, place in a stainless steel bowl and season with sea salt, the lime and cilantro.
