Red Wine and Mint Infused Strawberries with Strawberry Granita

Description

For this granita make sure you're using quality liquid.  I love using a Gigondas from E. Guigal, any good high end red Rhone will do nicely.  Make sure you also get the best rose champagne you can get your hands on, don’t use pink champagne.

Ingredients

  • 2 q cleaned and quartered strawberries
  • 1 bottle of dry red wine
  • 2 sticks cinnamon
  • 1 c fresh squeezed grapefruit juice
  • 8 sli fresh ginger
  • 1 T whole black peppercorns
  • 30 mint leaves, cut into fine threads
  • 2.5 c sugar or more to taste (reserve 1.5c for granita)

  • 3 pt quartered, cleaned strawberries
  • 1 bottle rose champagne

Instructions

The Berries
Bring the wine, cinnamon, grapefruit juice, ginger, pepper and sugar to a simmer over medium heat.
Cool, strain and pour liquid over strawberries and marinate for 6 hours.
Stir in the mint and divide into 8 bowls.
Garnish with the granita

The Granita
Combine half the berries, the sugar and 1/3 cup water in a medium saucepan.
Bring to a simmer to dissolve the sugar.
Transfer the mixture to a food processor, add the reserved berries and process until smooth.
Strain through a fine mesh sieve, stir in the champagne and lemon juice.
Scrape mixture into a shallow metal baking pan (8 or 9 inches is fine) and freeze.
Every 20 minutes, stir and scrape the granite.
After several hours the granite will be ready to serve, shale-y and roughly frozen.
You can also freeze completely and pulse the frozen granite in a food processor.
You can also scrape the granite with a spoon instead of processing it.
