Pearl Rice Balls

Description

These rice balls can be made ahead of time and steamed right before serving.  They are easy to make in large batches and are perfect for party appetizers.

Ingredients

  • 1 c short grain rice
  • 1 lb ground pork
  • 6 minced scallions (reserve 2t for sauce)
  • 6 water chestnuts, minced
  • 2 t sugar (reserve 1t for sauce)
  • 1 t salt
  • 2 minced garlic cloves
  • 5 t grated fresh ginger (reserve 3t for sauce)
  • 1 t toasted sesame oil
  • 2 1⁄2 t soy sauce (reserve 1/2 for sauce)
  • 4 t rice wine (reserve 2t for sauce)
  • 2 t hot chili sesame oil

Instructions

Soak rice in cold water for 30 minutes

Drain and spread on paper toweling to dry.

Combine all other ingredients

Divide into 18 balls, shaped with wet hands.

Line a bamboo steamer with banana or cabbage leaves.

Roll balls in the rice to coat.

Place on the leaves, cover the steamer.

Place steamer in a prepared pan over boiling water and steam for 25 minutes.

Serve with ginger-soy dipping sauce.

Whisk remaining ingredients together.
