Description

Light and crispy, this chicken is great hot or cold.  Serve it up with some homemade coleslaw and buscuits.

Ingredients

  • 4 legs
  • 4 thighs
  • 4 bone in, single breasts, halved at the ‘waist’
  • 1 q buttermilk
  • 4 c all purpose flour
  • 3 c corn flour
  • 0.33333333333333 c kosher salt
  • 0.25 c ground black peppe
  • 0.25 c paprika
  • 2 T dried thyme
  • 2 T dried ground sage

Instructions

Combine chicken and buttermilk and let marinate overnight.
Combine all the dry ingredients and place in a paper bag.
Drain chicken from marinade and toss in the bag to coat with the flour mixture.
Fry in several quarts vegetable oil at 350 degrees for 20-25 minutes until cooked through and crispy.
Drain on newspaper or paper toweling for 5 minutes.
Season and serve.
