Description

Demi glazes are achieved when the stock has reduce to a thickness where it coats a spoon.

Ingredients

  • 1 gal beef, veal or chicken stock
  • 3 sprigs tarragon
  • 0.5 c marsala wine
  • 1 T tomato paste

Instructions

Combie all ingredients and bring to a simmer over medium heat in a sturdy, well insulated cladd-ed pot or iron wear pot.
Reduce heat to maintain a simmer and reduce by 75%
Pour and strain contents of the pot into a 2 quart sauce pan and reduce slowly to a demi glaze.
Strain and store in refrigerator for utilization.
