Description

Ingredients

  • 8 chicken legs
  • 8 chicken thights
  • 4 single, bone-in chicken breasts, halved
  • 3 T olive oil
  • 2 minced onions
  • 1 c diced tomatoes
  • 2 t cinnamon
  • 4 T minced parsley
  • 1 c white wine
  • for the picada:
  • 20 blanched chopped almonds
  • 4 tbsp pine nuts
  • 4 minced garlic cloves
  • 2 T parsley
  • 0.5 t saffron

Instructions

Heat the oil in a shallow casserole and brown the chicken, add the vegetables and seasonings.
Continue cooking for several minutes.
Add the wine and stock and simmer, covered for 15 minutes.
Remove cover and simmer for 15 minutes more.
Combine picada ingredients in a food processor and add to pan, continue cooking for 15 minutes more.
Season and serve
